Its Friday and I don't have class today so I decided to test my recipe for caramel coated popcorn which is a success plus another experimental recipe of mine for Kung Pao Chicken, made two versions because my mom doesn't like spicy food so I made 2 separate dishes ok so here it goes the recipe and procedure of my Caramel coated popcorn and Kung Pao Chicken. enjoy.
Caramel Coated Popcorn
Ingredients
Caramel mixture:
half cup butt er
half cup Corn syrup
half cup brown sugar a
tsp of baking soda
Popcorn:
100 grams popcorn kernels
1/4 cup butter
vegestable oil
pinch of salt to taste

Procedure:
1. Cook your popcorn corn kernel the usual way you cook popcorn then add a pinch of salt after all the kernels have been popped then set your popcorn aside.
2. It is now time to make your caramel mixture ok so lets start by preparing a medium size pot that is large enough to stir your popcorn.
3. On that pot, add the butter, brown sugar and corn syrup together then keep on stirring under medium heat until all the ingredients would caramelized.
OK so how do we know that the mixture is ready?? their are 2 ways according to my research. One is to use a candy thermometer and measure it around 250 degrees but since I don't have a candy thermometer I used another method. I prepared half cup of cold water then pour a little of my mixture into the water, if the mixture hardens then we are probably on the right track.
4. After making sure that the mixture is on the right temperature I am going to put off the fire then add the last ingredient which is the baking soda, you'll noticed that it will start foaming then rise up a bit so just keep on stirring the mixture until it is well mixed.
5. Prepare your popcorn then add all your popcorn to the caramel mixture and start mixing, if you feel that all the popcorn is well coated, remove the popcorn and put it on a bowl and let it cool.
6. After about 15 to 20 mins, you can now start breaking your caramel popcorn into pieces and put it into your desired container. I suggest that you store it in a cool place or inside your refrigerator because it will make your popcorn more crispier and crunchier.
OK so your done, after an hour into your fridge am sure that your caramel popcorn is now ready to be consumed or it can also be a great gift. :)
